At Dyptique, Cheval Blanc Maldives. Not a huge amount on the nose. Creamy, ambrosia, no obvious florals. On the palate, off dry but creamy. Delicious. Rice pudding and cream notes - lovely texture and some obvious acidity. Long finish. Very enjoyable. — 7 years ago

This is ginjo version, not honjozo version. Fresh yet flavourful and medium body, smooth taste goes well with any dishes. Temp tasted was from chilled to room temp, then tried on luke warm temp as well. Once passed room temp, initial flavour really kicks with rice and a little alcohol; but tasted actually milder than when chilled.

Drank over 6 weeks opened in my fridge and it stayed fresh throughout. Richly layered aromas and flavors of chocolates, pistachio, green grapes, and honeydew melon with floral undertones. Savory but offset by some residual sugar. Sufficiently robust for the main course. Really nice. — 6 years ago
