Of course the 2014 Chaillot is in its early stages (although it is considered to be an early maturing and approachable vintage for Northern Rhône), but a multi-hour pre-dinner decant served it well as it was very open, giving and multidimensional showing great depth, power and an elegant backbone. A favorite winery of mine... This one needs a little more bottle age, or a splash decant... A muted nose opened to crisp honeycomb apple, ginger root, and a toasty brioche character. Feels like bit of lees influence too. Round, layered, and soft on the palate with yellow apple, pear and melon rind. Bright acidity shines on the mid-palate with a limestone crouch to the finish. We can throw around the idea of a classical wine or producer, but there are precious few that are true classics. This is one. If lightly peppered red berries were made of liquid silk, that would be almost as smooth as the palate of this. Aromatically, this is a fresh summer bouquet of florals & herbs.
