Fabulous Chablis, served with poached lobster at The River Café, Water St., Brooklyn, NY — 11 days ago
Popped and poured, enjoyed over the course of a few hours. The 2021 pours a straw color with medium viscosity. On the nose, the wine is developing with notes of yellow apple, peach, honeysuckle, squishy, pineapple, clove. On the palate, the wine is dry, but showing significant fruit. So much so that it almost gives the impression of being off-dry. Acid is medium. Confirming the notes from the nose where the honeysuckle note is crazy powerful. The finish is long and there’s a slightly oily texture. A great, young Chave Blanc with a very bright future. Drink now with patience to allow it to open and drink through 2046+. Bottle 05182

Reddish in color with medium intensity.
Pretty and complex nose, and medium plus in body with medium acidity.
Dry on the palate with raspberries, cherries, spices, very light oak, licorice and chocolates.
Long finish with fine grained tannins and cherries.
This is a beautiful red blend from Châteauneuf-du-Pape. Elegant and nicely balanced. Rich and fruit forward. Very fresh tasting, and easy drinking.
Still young, but already complex and interesting. The high alcohol is well integrated already.
Good right out of the bottle, and better with airtime. Will continue to age nicely in the next 10 to 15 years.
A blend of destemmed grapes from over 100 year old vines. 60% Grenache and 40% Mourvedre. The Grenache is aged in concrete vats, while the Mourvedre is aged in new French oak barrels.
16% alcohol by volume.
92 points.

07 is in a fabulous place, expressive, detailed and defined wafting layers of creme de cassis, camphor and violets with a vibrant and velvety palate with soft tannins and a long mineral inflicted finish. An absolute classic and an elegant rendition in 2007, and fully open for business! — a month ago
Unbelievable. So much flavor, so light yet good texture and long finish. Probably my favorite. — 11 days ago

Strawberry, blueberry with medium acid, beautiful medium ruby color, medium body with dry ending. Great on its own, even better with duck breast. — a month ago

Tablas Creek is the world's first Regenerative Organic Certified vineyard in addition to Biodynamic Viticulture and the pioneer California Rhone’s movement in Paso Robles AVA, which has a pedigree and collaboration between the Haas family & Perrin’s from Cháteau Beaucastel in Rhône, France by the mid 80’s.
The V.2022 Esprit de Tablas Blanc is their flagship white blend of 33% Roussanne, 32% Grenache Blanc, 14% Picpoul Blanc, 8% Clairette Blanche, 8% Picardan, and 5% Bourboulenc that were chosen from the top lots of 6 white Rhone varieties propagated from budwood cuttings from the Château de Beaucastel estate.
This is an incredibly complex white like no other; mineral-driven, savory, with a nice green sliced apple aromatic notes. On the palate, the mix of lemon and pineapple with some hint of salinity twist your tongue nicely. The overall mouthfeel combining the array of tropical fruits, herbs and the intense long, but not-overpowering finish makes it a top-notch white that differentiate from many produced in the Adelaida District in Paso. A truly winner! — 7 days ago
