I corvined this last weekend and put it back in storage for tonight. I had a very different experience & thoughts on this wine last weekend un-decanted. This is wine comes from a period when I loved Caymus. After 2011 when they started picking later and at higher brix’s, they lost me but, got higher Parker scores and rave words from people that like sweeter Cabernet that drinks young.

Last weekend without a decant, very dominate bright cherries and vanilla.

Tonight, the nose reveals, dark, slightly syrupy currants/cassis, blackberries, dark cherries, creamy, black raspberries, blueberries, black plum with lots of skin dominate, baked strawberries, black licorice, vanilla, some clove and a touch nutmeg, underbrush, dry crushed rocks, dry top soil, volcanic minerals, black tea, touch of black coffee expresso, liqueur/dark berry cola, used leather, hints of graphite with ruby, fresh, dark, fresh, dark, red, blue florals with violets.

The body is full, sexy, gorgeous and voluptuous. The structure, tension, length and balance are at the start of its high point with another 7-10 years of good drinking ahead. Dark, slightly syrupy currants/cassis, blackberries, dark cherries, creamy, black raspberries, blueberries, black plum with lots of skin dominating, baked strawberries, black licorice to deep anise, vanilla, some clove and a touch nutmeg, caramel, mocha, dark chocolate, dark spices with just a touch of palate heat, underbrush, used leather, dry crushed rocks, dry top soil, volcanic minerals, black tea, touch of black coffee expresso, liqueur/dark berry cola, used leather, hints of graphite with ruby, fresh, dark, fresh, dark, red, blue florals with violets. The acidity is like a needed waterfall shower. The long finish is, deep, dark, well balanced, elegant, ruby, ripe, polished and persists endlessly.

It’s been awhile and I’ve missed it. This is a very good example of why I used to adore Caymus. — 7 years ago

Complex nose. Bread, nuts, lemon merengue, slate, and a reductive smokey note. On the palate, the wine is stuffed with substance but is yet to unfurl and bubbles are quite pronounced which distracts from the flavour profile. Slightly disappointing but full if potential. — 7 years ago

I will preface this note by disclosing that I am generally not a fan of Super Tuscans. I like old school Toscana. But I will try to be objective here. The nose is very evocative of a classified growth Bordeaux: lots of cedary, gravelly scents and some dark berry fruit underneath. In the mouth it is concentrated and soft, but develops weight in the back half of the palate. Some peppery heat from alcohol at the end too. I know it’s predominantly Sangiovese, but it really does taste very Left Bank, except for a little note redder fruit at the end. — 8 years ago

Absolutely amazing. Lots of good brett. Balanced and delicious. Great dark fruit aromas and flavors. So smooth. Medium high tannins and acidity. Perfect silky texture. A little funk on the nose and palate (positive). Aroma and flavors are out of this world. Leather bag full of cherries and raspberries. Blend: Cabernet Sauvignon, Cinsault and Carmenere. Complex. Had over the course of a couple of nights. First night was a classic Chinon on the nose and palate, although a little lighter bodied than many other Olgas I have had. Good spice on the palate and barnyard on the nose. Second night the nose was similar but the palate mellowed. A solid Chinon but not the best I've had. I have tasted many 1961 over the years, this continues to be one of my favorite wines...The strange thing is that this bottle with its high necklinewas the youngest 1961 that I had ever tried, wine had an great Providence - One owner and one incredible cellar.

1961 was a magical year on the right bank; now over 50 years of age it has lost some weight but picked up elegance on the nose - wet clay, graphite/lead pencil, umami/truffle - nose candy for sure. — 12 years ago
