Have you ever blown a really good thing?? At what point was that deciphered? I'm at my parents' place for the weekend, and I totally despise their electronic wine opener. I always wreck a cork with this gadget that is supposed to make my life easier. Call me old-fashioned, but I prefer the traditional ole manual bottle opener, thank you very much. I know how to use it, and we never grind a cork with it. But no matter what the fallout, fundamentally, if it's a good wine, take the cork out of the glass, clean up the fallout, and enjoy the dang wine!! I do realize that sometimes an easily-blown cork is a huge hint that the wine is too old/too dry/flawed and that's another thing. But don't knock it 'til you've tried it! Concentrated cherry jam, hint of clay earthiness, hint of red pepper grind on the nose. Medium plus body, med p acidity, fruity cherry and strawberry and vitter structure comes togther on the palate, quite structured chambolle for me. Medium fijish with minerality and structure. Always enjoyed this one, I don't think it would have lasted unless it had this acidic backbone, there's a caramel/spent coffee grind aspect, don't think you could consume a whole bottle, but for the Langoustine/Foie Gras/Ravioli/Black Truffle it's one of the best pairings I've ever had. — 10 years ago
