A few years ago bought several bottles thinking I could medium age a few while I dipped in and out of tasting them. Now only one bottle left. Oops. I like best how its drinking now, has a nice acidic snap, had a broad, ungainly tomato-ey tone which now feels fresh & terroir specific, ie, red fruits incl wild raspberries & strawberries. Sauternes Sémillon-Sauvignon Blanc Blend 1997

Pancakes and Sauternes.
Two guilty pleasures.
Voluptuous nose on opening, wafting honey, beeswax, glue, apricotpreserve, molasses and that savoury twang I often pick up in mature Sauternes (something shrimpy/bacon-ey). Rounded and sweet in the mid-palate, getting more dry towards the finish which is starting to show a faint metallic note now, suggesting that this wine should be drunk earlier rather than later.
A very very fine example of aged Sauternes, though.
