In the zone! Deep, ripe black and red cherries and lovely mossy earth. Ripe and with a lipstick like intensity. Palate is deep, rich, ripe and concentrated but with beguiling freshness and wonderful purity. Lots of grip and cut. Really intense due to low yields but still has that Girard drinkability factor. Terrific, quintessential Loire Sauvignon - crisp mineral acidity and beautiful fruity sweetness to back it up. This is modern style - still clearly Loire in emphasizing structure over citrus peel but wonderfully opulent and generous and far fruitier than most from New Zealand and more mineral than most from South America. Chilled this burgundy felt restrained, minimal, and one dimensional. As it opened up though, paired with a delicious bouillabaisse, escargot and the best foie gras I’ve ever had, thus started to really come into its own. Medium body, a refined minerality but with delicious notes of crisp apple, baking spice, and an some richer, pastry like notes on the finish, this wine truly came into its own with some warmth and time. Not too rich, not too dry, a perfect balance of crisp fruit, minerality, and baked richness for shellfish dishes with a tomato base. — 2 years ago
