We made 2 mistakes with this wine: drinking it too young and not giving it more time to air. A couple of hours decanting would have been ideal. The wine cannot be faulted for either of those! At 8 years this tasted young at first and needed a good 4 days open in bottle with a stopper to fully open. Once open it was quite nice: good dark fruit, touch of earth, eucalyptus, and good black pepper spice. Carmenere is such a good grape. Yum. — 5 years ago

The NV Joseph Perrier ‘Blanc de Blancs’ Champagne includes 15% reserve wine and was aged on the lees for five years prior to disgorgement. Bright lemon zest and crushed seashells mingle with Gravenstein apple and shades of nutmeg infused sourdough bread all parade on this beautiful bouquet. The palate is fresh and vibrant with wonderful verve and a soft texture. Kumquat zest infused Challah bread and a bright salinity combine with fresh Granny Smith apple and shades of marzipan on the palate.
