A friend had a “reduction party” as he was needing to thin out his cellar. Definitely a party I’m happy to attend!

Compared to the Blanc de noir and Blanc de Blanc offerings from Ultramarine, I found this to be their most champagne-like. Fresh strawberries, gummy red fruits, rose petals, chalky limestone aromatics. Incredible acidity...sharp and laser like. Mousse is very fine and less creamy than their other offerings. Cherry limeade, tart stone fruits. No yeast. I think this will cruise for a good while. Still quite youthful. My thanks to
@Mark Flesher for opening, so that I didn’t have to touch mine!
