Paired with 96 and 85 LB for fun. Dark, opaque and purple. Over the top with its fruit and teeth chattering tannins. Great to see what these start like and where they go in 20-40 years. — 7 years ago

Cristal Brut Champagne Chardonnay Pinot Noir Blend 2002

As stately as I expected it to be (can one really expect anything less of a wine as legendary as Cristal in one of Champagne's most celebrated vintages?) glinting pale gold, the color of a freshly-minted coin. The 2002 Champagne Cristal Brut Millésimé is imbued with soaring notes of pear and smoke, brioche and chalk. Disgorged in 2009, this is a precise wine—it has a sort of crystalline weightless density, with fruit buoyed by a fine mousse, and edgy saline-tinged minerality emerging at the close. 10 grams dosage.

"You must be as precise as a Swiss watchmaker, I tell my team," our host, M. Jean-Baptiste Lécaillon, Chef de Caves at Roederer stressed. Precision in spades.

Château Margaux

Premier Grand Cru Classé Margaux Red Bordeaux Blend 1900

Spectacular! Mind blowing. One of my top 10 of all time. On every serious wine lover’s bucket list, and here we had a nigh perfect bottle. While aromatically a little recalcitrant, you still got some of the Margaux violets and potpourri on the nose, hints of clove, all trying to shake off their doldrums. But on the palate, it was timelessly ravishing. The finesse, richness, balance and smoothness, with an underlying, almost flabbergasting mixture of complexity and delicacy, was just astonishing. The finish is marvelously sweet and intense, with chocolate and cassis and utterly seamless tannins. This is a miracle of wine making and an exaltation of vintage and terroir besides. Wow! And bravo! We can only pray for an encore of such a wine. — 9 years ago

Imperial Gran Reserva Rioja Tempranillo Blend 2007

#wsetschool Deeply ruby coloured top level Rioja with large quantity of Graciano given it that deep intensity. Pronounced nose of black cherries, red currants and cranberries, with wet leaf notes. There are smoke and toast, cinnamon and cedar from its time in oak, and of course there are tertiary aromas from bottle ageing, like: tobacco, game, leather and dried fruits. This has medium (+) tannins and acidity and an excellent long finish. — 10 years ago

A redo after that disappointing 2002 Pichon Lalande two weeks ago on #steakandclaret night. While this is not again what I expect from this producer, it is better than the 02. Nose of cedar, fresh tobacco, stones and dry soil, quiet baking baking spices, ripe & lean; blackberries, dark cherries, cherries, strawberries, pomegranate, hues of blueberries, light mushroom, soft leather, black licorice cola and fresh red florals. The body is leaner to medium and well resolved. The fruits are fresh & bright. Dark cherries, cherries, lean blackberries, strawberries, cherries, pomegranate & cranberry juice, hues of blue fruits, saddle-wood, sweet suede leather, fresh tobacco leaf, cedar, dry stones, top soil & rich turned dark earth, limestone minerals, dry stems, slight touch of dry herbs, round, mouthwatering acidity and lean, long, well balanced fruit & earth, good structured finish with length. Finish lasts a full minute. Still 8-10 years of good drinking ahead. 9.3 with the ribeye. — 8 years ago

The crushed herbs, cigar smoke tickle the top palate. Savoury dark chocolate intermingled dark fruits play around but the tannins are big and slide across your tongue like a thick leather belt. Needs time. With fillet mignon and mushroom sauce. — 11 years ago

A completely different wine than the Dominus. This was full throttle and slams you back in to your seat with its G forces. So ripe, almost over the top; but it decelerates just in time and the finish is so succulent it lingers in your mouth forever. Filled to the tip of the cork with graphite and teeth staining purple fruit. This is the malevolent bastard child of a young Colgin IX Syrah and 2000 Chateau Pavie. Gobsmacker. — 7 years ago

Premier Grand Cru Classé Pauillac Red Bordeaux Blend 1962

Another level... Still dense at the core, with steady, attractive bricking: Wonderfully dense nose of blackcurrents, pencil shavings, fine tanned leather, and a hint of woodland floor (fine moss, leaves, and fresh soil after an autumn shower). Velvety tannins and great acidity. Along with the '66 this is one of my all-time favourite Bordeaux vintages. Seems to be keeping up better than the '61s I've had over the last few years!

We drank half of it from the coravin before waxing the top in case the cork had lost too much elasticity to self-seal. I'll have the rest with my brother in a few weeks' time!

Actually, I use bottle wax, melted in a spoon over a lighter. May be a little associative of the heroin ritual but it's very effective!
