My ex mother-in-law made a Swedish bread every year at Christmas. This brought all of it back, the yeast, cardamom and toasted almonds. It unfurled slowly, and my notes expanded accordingly—heady aromas of golden delicious apple, shortbread, dried honey, lemongrass, ginger and a delicate whiff of smoke. The mousse is very fine, and despite a vast, complex nose, it's razor-clean on the palate. Here, the terroir shines through tightly coiled acidity. I thought it was a bit spicy, and could easily pick out the roast coffee. Paired wonderfully with beef chili.
