In such a killer spot. Wow. One of the all time greats, 1996 is explosive tonight, wafting from the glass with stunning aromatics of honeycomb, dried orchard fruits, roasted nuts and drizzles of caramel. The palate is expansive, textural, incredibly deep and sensual with brilliant density. There is such an incredible combination of freshness and secondary character of an aged Champagne, and its racy citrusy acids bring it all home. Incredible potential loaded in this top St Julien from a top year @ £145 paid now £200-235 this is a monster 😈 superb now but wow in 10-20 years juice of the gods 😍 Had eased back since a year ago as it was more full on then 😉 This wine will outlive me 😁

When Salon has some age that’s when it shows how special it is. It gains most notably in texture, aromatic complexity and really becomes singular in its expression of Mesnil Chardonnay. 2007 is in a beautiful spot, stunningly pure with incredible fruit and mineral definition and a finish that just stays with you. Layers of velvety tannins were the hallmark of this wine. Nose was a bit reticent but yielded dark fruit and graphite. But the real story was the palate that had incredible unctuous mouthfeel, juicy dark fruits with a touch of graphite and a very long finish. Elegant and extremely perfumed, a nice juicy red fruit core featuring ripe cherries, raspberries, and strawberries, followed by dried lavender, meaty beef jus, orange peel, undergrowth, sweet tobacco, charcoal, and intense black pepper. Delicious sweet red fruit flavors on entry with some dried apricots that lead to a umami rich midpalate filled with meaty notes, iron, and a slightly saline minerality that intermingles with intense peppery notes that linger for some time. Wow, incredible, and still holding up after all these years. Upon opening, basically no fruit, all secondary characteristics, especially on the nose. As it opened up, some dark cherry appeared and eventually the nose and palate came together. A sensory journey 48 Years in the making and a pleasure to partake. — 8 years ago

Seemed like the right time to open this. The candy like flavor that I see people complain about had blown off this wine and it just had this incredible purple inky color and rim to it. Very enjoyable. Still had good fruit and sweetness without losing too much luster. Caymus used to age forever but I would drink these up by 10th bday. — 4 years ago

Quick funny story:
Christine & I are LUCKY to have Kelly work in our office but we are BLESSED to be able to consider her and Darryl as dear friends.
We recommended to Kelly, prior to her going on vacation in Charleston SC, that they should stop by the Belmont hotel. They have a bar and restaurant that is 2nd to none in that area. Christine & I LOVE it!!!! Kelly sent me a quick text to say “hey, we’re at the Belmont! And about to have dinner!”
Being the goof ball that I am..... .....I called the Somm and said “I don’t care what they ordered, bring them a Shafer Hillside Select with some age on it!!!”. 10 minutes later he was decanting a 2003 Hillside Select table side! I love that hotel! Incredible service, incredible food and always a phenomenal experience! The only thing better are-our friends that are there right now!!!!
I didn’t Have a drop of this wine but I am scoring it a 10 based on experience alone!! It must have been “Badass in a Glass” as I always say!

Dark, inky crimson, opaque, compact rim.
Classic Cheval Blanc bouquet. Seductively floral - rose petal, lavender, violet. Elegant red fruit profile with fresh mintiness in abundance.
While evidently young and thus structured, this wine is extremely nuanced and soft (in a good way). Sophisticated and complex black and red fruits highlighted by fresh herbal undertone (mint, sweet basil, and thyme). Incredible finish - long and uniquely memorable.
No doubt, it will be spectacular in 10-15 years and beyond. My first young Cheval is exactly everything I was hoping for and more. 94++ — 8 years ago
