Les Combottes Gevrey-Chambertin 1er Cru Pinot Noir 2010

Light like a feather. Quite stinky on the nose. Drink now! 13.5%. Brown tinge. Touch oxidized. Subdued cherry, orange zest. Very fine grained tannins. A touch more fruit would be nice. At this point tastes like an old Burgh. Definitely drink up this will not further improve. Was fun with black cod prepared a la Nobu. Would i buy this again (No). This is in the end not one the producers in Burgundy which i would recommend (based on multiple bottles including GC’s over time). — 6 months ago

Lovely to finish a long evening.

Paired w/ shortbread w/ Macadamia nuts.

I like their craft. This is good but will ascend for 10 years.

Reductive in style. Pineapple, lemon, grapefruit, lime zest, white peach, light tropical melons, cheese cloth, cream, some mint, bread dough, yeast, limestone alluvials, sandstone, light white spice, sea fossils, baguette crust, yeastiness, bread dough, yellow lilies, jasmine, Spring flowers, round crisp acidity, well balanced, nicely knitted, with a smartly polished, elegant finish that’s lasts two-minutes.

Fleuron Brut 1er Cru Blanc de Blancs

Dec 11, 2021 Saturday dinner w/ Jack D celebrating J2’s good news. This champagne was such a lovely surprise. Bright, crisp, citrus. Lots of complexity, and lots of fine bubbles. Good with food or alone. Wish I had more. First bottle purchase. — 4 years ago

Very solid Loire Sauvignon Blanc. Steep Hill Importer-I like their portfolio as seems to emphasize true to type varietals. Nothing flashy, just good ol fashioned terroir. — 5 years ago

Delicious. Happy 248th birthday America & all Delectable users.

Nice, soft mousse, slightly rich, gentle co2, green apple, lemon meringue, lime zest, tropical melons, both white stone fruits, kiwi, underripe pineapple juice, vanillin, some minty & dry herbs notes, semi-moist chalk power, alluvial limestone, sea spray, soft white spice, bread dough, light yeastiness, yellow florals & lilies, jasmine with fairly heavy greens, nice, round, soft acidity and a well balanced, structured, tensioned and smartly polished finish that last ninety seconds.

Photos of; Olivier and Didier Gimonnet, great grape squeeze, cellar with riddling racks and one of their sun golden vineyards.

After a few days! That is pretty cool that it lasts that long.

@Manny Abascal As long as you pour carefully and get a stopper in the bottles quickly I’ve found the best champagne usually lasts and improves for days or even weeks in the fridge! I sometimes use it as a proxy for storage potential similar to other wines.

Interesting! I am going to try that. I usually put a stopper in at the end of the evening after it has been sitting out a while. A few still do ok but most don’t. I’m moving to your method. Thanks for the tip!

Light straw; smokey nose that suggests an impactful palate to follow; this is very mineral and masculine somehow. The chalky minerality is all I remember, that, and today this upstaged the 2015 Special Club. Base is 2019.
