Initial, buttery nutritional yeast, crystalline mangrove honey, magnolias, marigold, candied lemon peel and sweet rosemary, but don't let the fig addition and the sweet aromatics fool you; sour and underripe complexity ensues. Medium-heavy, unfiltered mouthfeel feels petulant, but swallows almost flat due to the dichotomy of dryness. Well balance between fruit, wood and acidity. At 12.5 % alcohol. Aromas of ripe cherry, red currants, tobacco, licorice with earthy and smoky notes. On the palate, dark fruit, root beer, cranberry, fresh mushrooms and a touch of mineral and smoked meat. Sharp, sorry, green, and altogether unexpected. Way less βwildβ than I thought! Reminds me of a cider or wild yeast beer in the subtlety of flavor. Produced a full head of cappuccino brown, that left a plethora of primitive dinosaur hieroglyphs. Completely opaque and dark as strong coffee. Turkish coffee impression similarly informs the aromas, with a raspberry-dark chocolate streak, a tiny dust of licorice, and some burnt caramel. Mouthfeel is stout perfection, bordering on whole milk with chocolate syrup. Want to try this on tap; bottled is delicious. First whiff after pour has a green, bracing freshness (pine?) that burns off as it sits for a few minutes, so savor that first sip! Citrus and apricots, great mouthwatering acidity. You'll keep sipping. For Founders, a clean and more minimalist beer. Nice change-up from them! β 9 years ago
