Somewhere between shoe polish and prunes on the nose with a streak of smoky allspice and juniper. Sarsaparilla tar, roasted eggplant skin, oregano, burnt corn, cat bed, wet leather, black beans, burnt coffe and cigar ends. Coffee-rootbeer, black pepper, black mushroom, and eel. She catches the eye slim with dreamy curves, darkly dressed complimented by earth-toned loosely falling ribbons. Gripping her firmly with one hand sliding finding her neck the other slowly pulling her upward she opens wet and her pale gold to yellow juice easily pours lightly, rhythmically dancing, ebbing and flowing revealing a subtle essence of ripe peach and flower petals against moist grass and wet stone, then she lunges spilling across your lips leisurely coating your mouth front to back with an orange essence her tannins gently grip, then she slowly slips on and away, "into the mystic..." and you wonder , will she come again...?

PS: particularly good with fresh whole slightly crispy sardines, cherry tomatoes and chilled organic cucumber all sprinkled with hot Hungarian paprika...

Bluestone Vineyards

Chardonnay 2014

This is Gov case winner and I can see why: terroir-driven Chard fruit (slight tropical accent w/ a delicates floral frame) core palate. Sort of like Bluegrass is different than country. It was clean and my only regret was opening about one year too late it was clean and my only regret was letting some of that energy dissipate. At four years from harvest, the oak had rounded and it was certainly delightful. A useful minerality was gentle in the cleansing finish. My mystic was pairing with the wrong entrée which took some of the appreciation out of the quality build. I will look to get a 2017 offering as it should be all this and a little something more ;) — 7 years ago

Straight soil & soul. The waves of terroir on this cuvée will not escape you::::it is relentless in its expression: hence the note on the bottle :: Expression Originale du Terroir. Very little fruit out the gate...dry...maybe something very dark and deep...minerality then soil and deeper and deeper. It has a mystic aura, ethereal. I can honestly say I've never tasted anything remotely like it. — 8 years ago

I'm of the opinion that it takes a wine drinkers palate to get into some of these beers, in my opinion, sours (or slightly sours) are some of the most complex.

Table Beer Everyday Saison

Mystic 'Everyday Saison'. Chelsea Mass. Retrieved from my Boston trip as a beer that would suit my palate. Great suggestion. Not many Saisons can be called session.
