Where do I begin… this wine is stunning.
It is positively golden in color with concentrated notes of caramel, butterscotch, vanilla, creme brûlée, dried apricot, yellow apple,peach, nectarine, yellow cherry, kumquat, baked quince, lemon curd, honeysuckle, butter cream, lavender,, dried herbs, fennel, beeswax, honey, chamomile, hazelnut, praline, honey, & wet stones…
It’s textured!!! Waxy & mouth coating, full bodied, round, & opulent.
Alcohol is high at 14.5% ABV — it’s warming but balanced and integrated with the deeply rooted flavors and elevated, vibrant acidity. Yum!!!!!

Opened just prior to service; enjoyed over the course of a few hours. As far as I know, this was the first commercially released vintage of La Fleur de Boüard but others may be able to confirm or deny that. The 2000 pours a deep garnet color with an opaque core; medium+ viscosity with moderate staining of the tears. On the nose, the wine is developing with notes of ripe dark fruits: back plums, cassis, pipe tobacco, Flintstones vitamins, purple flowers, dried green herbs organic earth and fine baking spices. “Yabba dabba doo!” On the palate, the wine is dry with medium+ tannins and medium+ acid. Confirming the notes from the nose. The finish is medium+. Gosh, this is in a really lovely place right now; very well balanced! Thank Andy! Drink now through 2040. — 5 months ago
Upfront and transparent and confrontational. Strong posture. Wears a leather jacket in the summer. Blood and rust and repressed tears and a grainy black and white western. Cigarettes that he rips the filter off of to make them stronger. — 7 years ago

Popped and poured from a half bottle; enjoyed over the course of an hour. The “Oeil de Perdrix” is made in the saignée method and pours a pale copper/pink color with a persistent mousse. On the nose, the wine is developing with notes of strawberry, raspberry, pink pepper, lemon, and chalky minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. (It’s evening). Bright straw yellow. Pronounced nose. Blossom, peach, sweet yeastiness, gentle nuttiness, golden apples and pears, spicy chicken skin soup, sweet baking spices (vanilla, cinnamon). Deep and intense but round and broad, not piercing.
Dry, high acid, high alcohol, full, rounded body, hint of spritz, very saline, nice long finish. A bit austere. Couldn’t quite cope with brilllat savarin but great with the others.
