Medium ruby in color; cherries, black pepper, and smoke on the nose; high acidity; medium tannins; tastes like sour cherries, clay pots, and strawberries with a long finish. It really opened up after decanting for about an hour. Nellie says she likes the flavor, but it's really acidic. Should be great with a creamy pasta. Distinctly savory, the NV Brut Trentodoc opens with a blend of dusty dried flowers, cardamom and freshly sliced pears. It fills the palate with a silken bead of fine bubbles, taking on a salty-to-sweet sensation as tactile mineral tones mix with ripe orchard fruits. 100% Sonoma Cabernet Sauvignon. Very complex. Dark ruby color with a garnet rim. Aromas and flavors of blackberry, plum, black currant, baking spices and dark chocolate. Nice hint of toasted oak on the long and lingering finish. Totally New World in style. Smooth tannins and excellent mouthfeel. Full bodied and juicy. Tannins have relaxed with bottle age.
