(It’s evening). Bright straw yellow. Pronounced nose. Blossom, peach, sweet yeastiness, gentle nuttiness, golden apples and pears, spicy chicken skin soup, sweet baking spices (vanilla, cinnamon). Deep and intense but round and broad, not piercing.
Dry, high acid, high alcohol, full, rounded body, hint of spritz, very saline, nice long finish. A bit austere. Couldn’t quite cope with brilllat savarin but great with the others.

This wine comes from a time when natural wine was still a revolution, not a trend. Foillard, one of the Gang of Four, took Gamay to wild, expressive heights with deep structure and an earthy sensuality which entices any wine lover. Twenty years later this wine is a testament of passion; on the palate the wine is so harmonious it decimates in your mouth like the most beautiful time lapse you’ve ever experienced. It is positively golden in color with concentrated notes of caramel, butterscotch, vanilla, creme brûlée, dried apricot, yellow apple,peach, nectarine, yellow cherry, kumquat, baked quince, lemon curd, honeysuckle, butter cream, lavender,, dried herbs, fennel, beeswax, honey, chamomile, hazelnut, praline, honey, & wet stones…
It’s textured!!! Waxy & mouth coating, full bodied, round, & opulent.
Alcohol is high at 14.5% ABV — it’s warming but balanced and integrated with the deeply rooted flavors and elevated, vibrant acidity. Yum!!!!!

No notes, I popped that bottle to celebrate my daughter's 12th birthday. We grilled an entire chicken on an open fire to celebrate, here in the Polish mountains, half a dozen miles away from the slovakian border.
I really like this bubbly. Brioche and fresh pastry notes on the nose, ripe apple notes, lemon juice. The palate is rich, broad, showing apple juice and lemony notes and that french pastry mouthfeel, almost buttery. There is some tang and acid drive in the rear giving it great balance. The finish is long and fresh. Only bit of criticism, I could do with more delicate bubbles. This is a great celebratory bubbly, really. Kudos ! — 3 months ago
