This grower Champagne from Paul Dethune opens with pretty, almost coquettish aromas of alpine strawberry, cherry crumble, roses and the merest hint of earth. And while the Pinot stands out—it should it's 80% Pinot Noir and 20% Chardonnay—prolific bubbles lead into an unexpectedly intense, tensile acid spine that arcs and releases into chalky repose. Really good. Base year 96 (50%,) with 95 and 97 making the rest. Broad and ripe in the nose- roses and bread. A developing saline/ marine element. Very Pinot (all Pinot?). Rounded and lush without over-ripeness. Singular and very lovely — 9 years ago
