A fantastic Provençal rosé. I feel like I'm back in Cannes, on the Croisette... so excited about the mussels in cream we are pairing it with. The wine has some grapefruit, but the acid and bitter are well-balanced with some bright freshness. Beautiful pale pink colour too. — 9 years ago

This exceptionally clean, refreshing Champagne comes from the northwest part of the region in the tiny village of Brouillet. It is composed of 40% Chardonnay, 30% Pinot Noir and 30% Meunier all from the Ariston estate and aged five years on the lees. Paul likes a good pop, so this starts out at seven atmospheres of pressure as opposed to the usual six. You know that wonderful smell you get when you walk into a barrel room at a winery? That fruity oaky beautiful aroma that puts a smile on your face. That's exactly what I detected as I swirled and smelled. Lots of dark cherry, baking spice, and star anise on the palate with a strong oaky overtone. The wine is nicely balanced. The finish is fantastic with a lingering floral/fruit note. A fantastic wine! — 9 years ago
