Worked well with teriyaki salmon and pickled cucumbers. Apart from crumbly dry corks... I love my Carlisles with 12-15 years of age. Wow. A powerhouse with finesse. A nose of freshly picked blackberries and chocolate pie. Glides along the palate effortlessly revealing blackberry, chocolate ganache, and pepper flavors. Classic Carlisle extraction. Beautiful nose of black raspberry, Bing cherry, licorice and cardamom infused with a bit of smokiness. Well integrated palate that echoes the nose, with a long fruit-driven finish underscored by tobacco. Well balanced for drinking now and should age well for another five years. — 9 years ago
