Perfect balance of long-hang merengue and lively golden cats eye with a tinge of greenish fire. Yeastbomb nose with a powerful ripe lemon aura. Drops of tangerine, grapefruit zest, lemon poppyseed cakes, pineapple and lillies. Nice, ‘I am beer’ intro of iron and gummy yeast, turns malty and unctuous with brioche, orange peel, toothpick, baked orchard fruits, metallic skim of caviar shimmering atop a soft pretzel. — 6 years ago

The Caymus of the Central Coast. Inky with massively extracted red and black fruit, and in a mode not unlike pie filling. Not to be denied, it's loaded with vanilla, baking spice, fig, and a few drops of root beer extract. The aura of charcoal and new leather weave throughout, all with an edge of tilled earth. Another day of powering through the stash to make room for baby stuffs! Luckily just an 8.3 abv. version of this big turkey. Gulp. Apple-cherry in bourbon compote/mincemeat pie plus Old fashioned/new fangled with a delicious root beer streak and rich vanilla aura softening a coriander prickle. Orange peel and fresh pear bent on being brandy. Coffee candies swim in bourbon syrup, over cooked chocolate pie, and pecan pie under cream. Vanilla throughout. Blood red, with maximum density. Rosemary, plum-prune, sage and thyme, blackberry, black cherry, black pepper, cassis, violets, piebald earth and a touch of cranberry aromatically. Medium mouthfeel of elegance, and satin-y tannins despite its youth. Smoky raspberry sporting a cranberry aura, black currant leaf, light cassis, and roasted lamb with the lightest mint. Fantastic pomerol at a great price point. Hold this for another five years at least, and you will be well rewarded. Otherwise decant and serve with rustic fare smothered in olive oil! Baby, it’s cold outside. Falling near 70! The stouts are out! This sleek black beauty has it all! Thick, even lacing in two tone cafe shades, a cumulus attitude. Clean almond and cacao pod with a lemon pith aura. Bee pollen, waterfall rocks and northern oyster shell, including a light brine. Medium mouthfeel and soft minerality prevailas sips reduce the lace to alphabet soup fonts and ultimately horror forests. Incredible depth and texture, with stony plum, dried black cherry, fig skin, powdery raspberry, dried violets, and a baked, black olive and red saffron aura. La robe est dense, signe d’évolution à peine perceptible.
En bouche c’est puissant, c’est rond, il y a de la matière. Le Vin est intriguant, on veut y replonger le nez, pour voir s’il y aura de nouvelles arômes. La fraise et le cèdre font leur apparition en bouche 4:15PM. Je sens que le vin va évoluer tout au long de la soirée.
Apres quelques heures en carafe, on dénote, le coté viandeux, plus terreux, boite à cigare qui se mélange parfaitement aux autres aromes.
Je m’attendais à un profil plus bourguignon ou plus Rhône Nord comme le 2004 dégusté il y a déjà quelques années mais non je l’ai trouve un peu plus costaud qu’a mon souvenir mais c’est tout à fait excellent et extrêmement bien fait
