Unlike ice cider or frost cider made in the United States and Canada, apples are frozen using refrigeration technology meaning the frost only goes one way--in. In nature, apples will freeze, thaw, freeze partially and unfreeze partially, moving sugars throughout the apples. You'll notice a difference in style here because the producer oxidizes the cider as a way to compensate for the artificial freezing process, but it's still a delightful dessert choice on a list. A rep told me to pour it over vanilla ice cream, but I'd rather just drink it straight. Notes of oak, caramel and baked fruit, it reminds me of a dreamy blend of sherry and Madeira. — 11 years ago

xmas eve. Really nice bottle. Medium brown / crimson hue. Was firing right out of the bottle. Double decanted for 6hrs and served with ny strip roast and it only got better. Tar, autumn leaves, ash. And a slightly syrupy caramel note that gave a bass (but not roasted) note. — 8 years ago

First Mugnier and Musigny. Opened one hour before pouring. The fifth bottle in the line up and the moment I brought the glass to my nose, I knew it would be the WOTN. Beautiful, pure, and ethereal. Layers of sweet cherries, rose petals, and violets. After a hour, secondary aromas of black tea, wet earth, and autumn leaves dominated. The nose was as seductive as it was complex. Settle into this well worn, comfortable leather club chair. Cigar tobacco, leather, briar berry, and cracked rocks. Velvety tannins, earth, charcoal, autumn leaves, stewed berries. Beautifully light and delicate. A brooding force at one point, now refined over time to elegance. Close your eyes and find yourself in that club chair, a cigar smoldering next to you. New ice wine producer for me from Yakima Valley. Paired well with Hedy's ice cream & sorbet creation. Nice array of stone fruits, marmalade, nuts, dry pineapple, wet stones, very good soft minerality, beautiful acidity, a thick, rich well polished finish with just the right amount of (RS) sugar. — 9 years ago

Mushroom, earthy, autumn leaves, tinge of metal. Dried fruits, particularly prunes and persimmon. Dusty and cool. At first, guessed Volnay/Echezeaux then settled with Gevrey. Guessed Rene Engel as the producer due to the purity on the nose and sweetness on the palate. I'm told this is not characteristic of Rousseau Chambertin though.
