Nykteri is a special style of Santorini Assyrtiko harvested at night. It is made more concentrated than your average Santorini Assyrtiko. Golden colour with dried spice, lemons, bruised apple, nuts, sea salt, ash with an insanely fresh finish. Assyrtiko in general reminds me of Riesling. This example feels rather Burgundian.
