WOW ~ most intense vintage I can recall ~ btl suggests cellaring 2 years and I'd have to agree ~ or give a good decant if ya gotta pull a cork! ;)

Made by Paris Sigalas, this single grape 100% Assyrtiko white wine from the Greek island Santorini. It is rich, concentrated and minerally with a taste of ripe melon and pear. The wine can easily age for more than 10 years, where this 2016 appears still young and very fresh.

May 29th, 2022Brings me back to santorini. Really lovely. That seductively rich body. Two years of age brings out the oiliness in a nice way but this wine ever so fresh like drinking a Greek sunset.

Compared to 2015, the fruits of the 2016 vintage more upfront, the acidity more vivid, and the palate fresher. The saltiness and chalky minerality remain. Another good vintage.
