Vaillons Chablis 1er Cru Chardonnay

Showing well not spectacularly--needs a bit more time and there's a big gap between this and the next levels up--Butteaux and MdT. Still delicious, with great minerality, but no ⚡️.

Great minerality, lots of stone fruit, a baby though.

It's hard to come close to this wine without falling in love! 2007

'07 vintage--Love this wine normally, but showed a little bit of sulphur early on that eventually blew off. Seawater, brine and lemons.

Drinking well showing clean & precise flavors, chiseled, with notes of lemon, citrus, oyster shell, mineral & racy acids.

Nose of lemon, apple & grapefruit with good mineral & richness, oyster shell, saline & pine needle.

This is in a perfect spot drinking beautifully with citrus, pineapple, crushed rock, saline & oyster shell.

Needs a little air to show its rich & creamy texture along with its nose of Lemon curd, apple, bees wax, chalk, oyster shell with floral & mineral notes
