Vineyard: Fourchaume is a 250 acres (100 Ha) vineyard, planted to the left of the Grand Crus. It is arguably the most recognizable and highly reputed of the Chablis 1er Crus.
Orientation: West/Southwest
Soil: Kimmeridgien - limestone
Viticulture: AgriBio certified since 2010. Farms organically and manually works the soils. Grapes are harvested in small cases of 15 kg and are immediately pressed.
Vinification: Alcoholic and malolactic fermentation in 50% tank and 50% neutral barrels of varying age.
Aging: Blended wines are aged on the lees for 18 months in combination of vats and barrels.
Notes: Fourchaume produces wines that are distinctly floral and fruity, possessing minerality and delicacy.

There is excellent richness and volume to the sappy, lush and textured medium weight flavors that possess both good punch and focused power, all wrapped in a clean, dry and ever-so-mildly austere finale. Lovely and a relatively elegant example of the cru. 91/2020+

Pale, bright yellow. Deeply pitched, youthfully subdued nose hints at nectarine, caraway seed and mint. The most intensely flavored of these 2014s, showing firm acidity and saline minerality for this often exotic premier cru. Die Cabernet Sauvignon Trauben dieses Weins stammen von einem einzigartigen Weinberg im Alto Jahuel am Fuße der Anden, dessen Rebstöcke alle mindestens 25 Jahre alt sind. Das Alter der Rebstöcke und die Beschaffung des Bodens sorgen für eine natürliche Einschränkung des Ertrags. Ohne menschliche Einmischung produzieren die Pflanzen nur ca. 6.000 kg Trauben pro Hektar. Die Trauben werden sehr sorgfältig handverlesen und dann der liebevollen Fürsorge und dem Weinverstand ihrer Meisterin Cecilia Torres übergeben. So entsteht durch die Zusammenarbeit von Natur, die durch den langsamen Reifeprozess im Maipotal für Trauben mit hoher Fruchtkonzentration sorgt, der "Zauberkraft" von Cecilia Torres und neuen französischen Eichenfässern, in denen der Wein seiner Bestimmung entgegen reift, dieser wahrhaft edle Tropfen. Bei diesem Wein bedarf es keiner Worte über seine leuchtend rubinrote Farbe, seinem üppigen und fruchtigen Bouquet oder seinem komplexen Geschmack mit fruchtiger Fülle, dieser Wein muss getrunken werden, um ihn zu verstehen. Es ist ein ganz phantastischer und einzigartiger Wein, der zu kräftigem und würzigem Essen sehr gut passt, und auch sonst, wo man einen vollmundigen, eleganten Wein braucht. Grande Cuvée NV. Oldest wine 1988. Amazing. Blend works especially well here. Rich and generous. Concentrated, but precise and long. Citrus and stone fruit - fresh. Touch of coffee notes that adds complexity and complexity to the mid palate. NB: 4,000 kg Marc translates to 2,050 for 1st Taille. 450 litres for 2nd and 3rd tail is sold off to third parties - never used for Krug. — 10 years ago

One of the best wineries in Chianti. Wine is reach with great flavours. The Chianti Classico is composed of 90% Sangiovese grape and other red grapes. Wine with a strong character. The grapes have been harvested by hand by the end of September- early October . Agrarian aspects Altitude - 300-420 mt Exposure - South, south-west Soil - Limestone, calcareous,pebbles Training method - Spur-pruned cordon Vineyard density - average of 5.000 plants/ha Age of vineyard - 5-15 years Yield / ha - 70 q.al Yield / plant - 1.3 kg. Harvest - late September - early October Alcohol content - 13.5% Ageing 80% of the wine is aged in the wooden vats made of French oak, 20% is aged into French and American barriques for about 12 months, bottle ageing for further 6 months. Vinification Maceration in wooden vats by 8000 l. for 10 days at 28° after a pre-maceration for 3 days at 5°. Post-maceration for a 3-5 days at 28°. The malo-lactic fermentation starts spontaneously. Description Appearance - limpid, deep ruby with violet shade, quite thick. Aroma - fruity, cherry and plum confiture, lightly spicy with black pepper and juniper notes. Taste - dry, warm, soft, quite fresh, quite tannic, full, balanced, intense and persistent, fine. Final comments - harmonious, ready. Suggestions - perfect with meat, rice or pasta with sauce, truffle or mushroom, perfect alone. Drink at - 20°C, best in decanter, uncork 1 hour before serving.
