A glass w work lunch of homegrown tomatoe/avocado and tinned sardines.
Medium yellow color. Aromas of drupe fruits (peach/apricot). Mouth is more about peach pit with a hint of bitterness and a savory, salty element. Went better w the tomatoes than the sardines (umami harmony?)

Pale yellow with effusive minuscule bubbles. Highly expressive aromas right out of the gate with toast with a dab of honey and smoke. Apples abound initially upon opening. Very pretty, delicate citrus notes of lemon zest and apricots. White grapes and really inviting spice. Dried fruit comes back with a warm embrace.
I’ve talked glowingly about these Bouvet champagnes before and will continue to do so because he just does not miss. The last vintage he made with his grandfather and though it’s oh so young, it exceeds expectations. Tiny production because most of the grapes are sold to Bollinger. Zero dosage so the terroir speaks clearly and the zippy acidity is pure. Composed of Chardonnay and Pinot Noir from Avenay Val D’Or, Bisseuil, and Mareuil sur Ay and disgorged in early 2020.
Very inviting in the mouth. No dosage isn’t everyone’s cup of tea but this is so warm and generous. Vibrant and engaging with orange and apricot notes. Toasty bread and hazelnuts along with chalk and sea spray. Exquisite minerality. These are exciting grower champagnes that seemingly only get better. — 2 years ago
