One of a handful of bubbles that we’ve been offering our guests at Theorem upon arrival. We’ll have some whites coming next year, but until then we start with Champagne (and even then it’ll probably stay part of the program because everyone at Theorem loves Champagne). This is the Champagne equivalent of a lemon bar, minus the sugar and add in the chalk and lees. Killer bubbles. — 5 years ago
Cayuse was called for after a long week at the office which consisted of tastings at Larkmead and Skipstone (not to mention tasting each barrel of 2016 Theorem) and visits to our two new vineyard sites (Moon Mountain and Dry Creek). The highlight of the week, though, was my first working lunch at Diavola in Geyserville. I get it now... anytime close and it’s mandatory.
As for this Cayuse... the 2011 God Only Knows Grenache comes from a 7 acre parcel of the Armada Vineyard in Walla Walla Valley. The other 25 acres or so are planted to Syrah. While close to being ready immediately, an hour open really helps it work out the kinks, which should almost be expected for a wine this exotic. At its core it is kirsch infused with fresh cracked pepper, forest floor, and Herbes de Provence, with a pure minerality that adds just enough acid, but not too much that it keeps the Strawberry from shaking its ass. Thanksgiving wine number two. A total baby, but wanted to check in on it since it’s the first vintage for merlot from the Theorem team (and I love their other wines). Toes the line between being a “cab lovers merlot” and a classic merlot. Dusty, baked mixed berry pie, high percentage dark chocolate, violets and cedar on the nose. Due to its age, oak plays a big role up front but softens toward the middle and finish. The fruit, mainly red and black, is underripe and tart...black cherries, dark plums, currant, dates and a dash of baking spices. Benefitted nicely from a decant. — 4 years ago

I’m sorry... I’ve been completely neglecting my Delectable presence lately. I’ve been working the front of the house and the back of the house at Theorem and haven’t had much time to spare lately. I should note that I absolutely love it and wouldn’t have it any other way. However, I do wish there was a way to communicate easily with the Delectable community in a way that doesn’t require a tasting note.
We processed over 6 tons of Cabernet Sauvignon from our Moon Mountain Estate today. 2018 is shaping up to be an excellent vintage and a heavy one too. Theorem’s sites are much later than most of the valley, so we have a few weeks still to go on harvest 2018, but the weather appears to be cooperating, so we can’t wait to close this year strong.
As for the tasting note... I’m in full harvest mode, so it’s beer only for a little while. This Super Cluster from Lagunitas is basically as good as an IPA gets. Loaded with citrus and pine. It combines a freshness and concentration with layers of bitterness and a sweet herbaceous goodness. Strong to quite strong. — 6 years ago

A great surprise. Enough sweetness that I wouldn't drink without food, but it has bright citrus and pineapple with honey on the finish. Paired wonderfully with Christmas gumbo (duck, turkey and andouille). — 7 years ago

All the fruit is in at Theorem. Our Voir Dire blocks came in heavier than expected and the fruit looks great, so we’re excited to see the 2018 become wine.
As for the Dom, I tasted the 2006 at Promontory on Friday, followed by the 2009 later that day at Theorem and felt like the 2009 needed a little time, but after processing 8+ tons of fruit today, the 2009 was perfect. Both @Shay A and @Antonio Galloni ‘s notes are excellent and I have nothing to add other than it’s really, really delicious (harvest exhaustion affects the vocabulary...). — 6 years ago

Finally getting around to posting wines from my annual Napa trip from two weeks ago. Always goes by quick! Lots of fun new stops this year.
Theorem was one of our highlights last year, so we made sure a return visit was lined up this year. Base of Diamond Mtn with one of the most beautiful properties I’ve seen. Over the last 12 months, they’ve added a couple new wines (with more to come from Moon Mountain). TRB is the winemaker.
Fairly similar to the Hourglass SB in that its profile is rich yet tight and zippy. Heavy amounts of lemon tart, limestone, slate, sea salt and fresh cut grass. Lots of acidity here, but there is a component about it that adds a roundness right before the finish which keeps it from being totally sharp. — 4 years ago
