Tasted especially good with elephants and buffalo roaming past our seated lunch in the bush on safari in Botswana. Dry, crisp and easy to drink. — 6 years ago

2019 Andean red reserve from safari wine in Fredericksburg, TX. A sweet red, not too sweet. Bright, reminiscent of sweet strawberry and watermelon. Refreshing finish. — 5 years ago
We had this wine twice on our trip. Once in their tasting room and again while on Safari at Rattray’s with dinner. Consistent notes and delicious both times for the price point.
The nose reveals; bright, ripe, red, blue and floral fruits. Vanilla, dark cherries, strawberries, blackberries, dark, rich soils, black licorice, steeped fruit tea, light baking spices and red, blue and dark florals.
The body is full. Tannins are dark & cocoa powdery, a little meaty and sticky. Ripe, red, blue and floral fruits. Vanilla, dark cherries, strawberries, blackberries, dark, rich soils, black licorice, steeped fruit tea, light baking spices, leather, dry tobacco with ash dry soils, granite minerals and red, blue and dark florals. Good acidity and a well polished finish. Hold a few years and get its even better self.

First stop this week in the Western Cape. Just landed in South Africa about two hours before getting to the estate. Was not sure what to expect this visit since last time we just did a quick standing tasting at the bar. Colin was an amazing host giving us a wine safari drive around the vineyards and dams before going down into the facilities and the owners private cellar.
Near the top of the estate Colin popped and poured some of this Brut MCC from the estate. Light greenish yellow with a creamy nose layered with green apples. Moderate acidity (6.5/10) on the palate with a light plus body. Very clean and fresh with some citrus zest, brioche and apples. Medium plus length finish. Drink till 2020.
Made out of 100% Chardonnay and disgorged two weeks prior to tasting (December 2017). Aged for two and a half years on the lees. — 8 years ago

The 2016 Cabernet is blend of 94% Cabernet, 3% Petit Verdot, 3% Cabernet Franc & 1% Merlot.
The nose shows; ripe, slightly sour but, bright floral fruits. Blackberries, black raspberries, black plum, dark cherries, baked strawberries and haunting blue fruits. Limestone minerals, vanilla, nutmeg, clove, Iight dark spice, caramel, dark, rich turned earth, mocha notes, dry crush rocks, used tobacco, light graphite, dry brush with red, blue and purple florals.
The body is full with sticky, dry, firm tannins. The fruits are nicely ripe and brightly floral. Blackberries, black raspberries, black plum, dark cherries, baked strawberries and haunting blue fruits. Limestone minerals, vanilla, nutmeg, clove, Iight dark spice, caramel, dark, rich turned earth, mocha notes, dry crush rocks, dry tobacco, light graphite, dry brush with red, blue and purple florals. The acidity is excellent. The structure, tension, length and balance are quite nice but require another five years in bottle. The finish shows nice balance with fruit & earth. It’s ripe, elegant, polished and persists for minutes. 92 now with the potential for more in five plus years.
Waterford toured us around the entire property in their Land Rover safari Jeep as if you were truly on safari.

Yum! Drank this on the recommendation of our Safari Camp Manager, Brett and it was incredible. Big, bold, fruity wine that held up really well to the local peppered venison (aka - Kudu) — 10 years ago
