Very young and tight on opening. After 3hours starts to gain fruit intensity and body still maintaining freshness and ending to a very pleasant Ventoux. Goes well with grilled iberico secreto. If you drink now decant or let rest for 2-3 years — 8 years ago

Medium to full "cuerpo". Balanced but pointed acidity makes me wonder how age might treat this. Aromas of Dark rasberry, spicy green peppercorn, a bit of green pepper and hints of oak! Enjoyable. Fruit and spice forward. Nice value. — 7 years ago

Cada Cocinero tiene su propia manera de preparar la papa a la huancaína que es una entrada y plato típico de la gastronomía peruana, en la salsa esta el secreto y sobre todo el queso con el que se prepara, si usamos un queso andino, arequipeño o huancaíno, el sabor y la consistencia son otras a parte claro está del rey, "el ají amarillo" hagan la prueba.
