Dark Ruby with Purple rim. Aromas of Mulberries and dusty cherries with low oak influence finishing with soft tannins and medium intensity. Steve Pannell is a master of alternative varieties in Oz like Tempranillo Touriga and Nebbiolo but here he addresses his talents to Syrah in the Adelaide Hills and does a great job as usual. Seems like most new wines, at least quality wines taste great the 2nd day, but the really good ones don't last a 2nd day 😔 . It would be nice to compare these piper's in a few years

Yes indeed, the aroma you smell up front can be described as "beef brisket." The 2010 is the only bottling with this aroma and it comes from the 6% Pet Verdot combined with the fact the wine was only racked once in barrel. It needs a serious decant much of the time. After the 2010 I started racking the wines more and that aroma blows off before it goes into bottle. Some CA Syrahs have that aroma and for the same reason; they need more air in barrel.

Light gold in the glass. Great leasy citrus and white stone nose with nice minerality and fruit. Nicely balanced structure with above average finish. Had this several times over the past 3 weeks during our trek across NZ and Oz. If tasted blind it would be hard to distinguish it from a young Meursault. — 9 years ago

A highly unfortunate episode of spilling 3/4 of the bottle yielded only 5-6 oz. of juice remaining in the bottle to drink. The remaining juice was dynamite, though. Very dusty and rustic with dried cherries, cedar, tar and black pepper. Fantastic. — 9 years ago

Elegant. A bit more old world than expected. Needs lots of time and air to really show its layers. Charcoal, savory herbs, roasted meat juices. Had the tannin structure to stand up to the 50 oz Tomahawk. Very nice CdP. — 10 years ago

Bin 707 Cabernet Sauvignon 2010

The nose shows graphite and minty eucalyptus, blackberry and black cherry with barely a trace of oak. A classy wine and would hold its own on the global stage in its on right and style. The palate shows deeper fruit, but it's not too much and meshes well with the firm tannins. The finish leaves a nice perfume in the back of the mouth that floats up to the olfactory of loads on the eucalyptus and some violets. #oz — 10 years ago
