Popped and poured, enjoyed over the course of a few hours. The 2021 pours a straw color with medium viscosity. On the nose, the wine is developing with notes of yellow apple, peach, honeysuckle, squishy, pineapple, clove. On the palate, the wine is dry, but showing significant fruit. So much so that it almost gives the impression of being off-dry. Acid is medium. Confirming the notes from the nose where the honeysuckle note is crazy powerful. The finish is long and there’s a slightly oily texture. A great, young Chave Blanc with a very bright future. Drink now with patience to allow it to open and drink through 2046+. Bottle 05182

Popped and poured; enjoyed over the course of dinner which lasted a couple do hours. The 2015 pours a deep ruby/purple color with a near opaque core; medium+ viscosity with moderate staining of the tears. On the nose, the wine is developing with notes of powerful ripe red and dark fruit: black brambles, dark cherries, black pepper, boozy Christmas fruitcake, licorice, garrigue, leather and rocky earth. On the palate, the wine is dry with sneaky medium+ tanning that build with air. The acid is there too although I wouldn’t call it the main character. It does, however, play a strong supporting roll. Definitely a wine of texture. It has been a handful of years since my last bottle of the 2015 and it’s evolving very nicely! Secondary flavors are starting to show and everything remains balanced. Extended air did get it to freshen up a bit so I’d say this still has a long life ahead. Drink now with a healthy decant and through 2035. — 4 months ago

75% Grenache, 15% Syrah, 10% Mourvèdre —a total stunner she is, drinkable now with a body to go the difference. The nose brings red fruits (plums, cherries, strawberries) and roses and rose petals. The palate is silky-smooth, fresh fruit giving way to tootsie roll and stewed fruit flavors, augmented by earth and sanguine balsamic grooves, a bit of herbal garrigue carrying the day. The finish carries on, persistent and solidly ethereal if we can make that a thing. — 7 months ago

I was going through my La Chapelle section today and my eyes got stuck on this 1999 - bottle looked absolutely pristine and I decided it was a perfect age to drink. Cork was in great condition and the wine was powerful and youthful with no signs of oxidation. Could have kept the bottle for a few more years, but it was probably perfect today. All the complex leathery earthy goodness you expect from this wine was there. — 2 months ago

One of the bottles from my annual WWC hosting. I opened this as a side by side to a 2019 Saxum White as the makeup is fairly similar.
80% roussanne/ remaining a mix of Grenache Blanc, Clairette, piquepoul blanc, picardan and bourboulenc.
Nicely expressive at pop, it then faded and hid in a shell for a few hours before coming back at last glass. At 80% roussanne, I expected a more consistent expressive profile (honeyed tropical fruits, some orange) and for the acid to show a touch, but it was a roller coaster. More melon and light fruits vs bigger/more tropical. Medium bodied but not as rich as expected. It’s clean and shows some floral and mineral/stony nuances, but I’d spend the extra and take the Roussanne VV to get more complexity and flavor. — a month ago
07 is in a fabulous place, expressive, detailed and defined wafting layers of creme de cassis, camphor and violets with a vibrant and velvety palate with soft tannins and a long mineral inflicted finish.
