I have a major soft spot for Governo, a style of wine made of all Sangiovese but where about 20% of the grapes are passito (rasined grapes). Added at time of fermentation. This effect adds color, alcohol, body to Sangiovese. Making it so much more enjoyable while young. — 9 months ago
