This is always a favorite in the sparkling category. Tonight I am getting something more in both taste and smell, though. Along with the usual strawberry, I am getting a fair amount of goat cheese. Fine and attractive, has a lovely approachability in its supple fruit, pliant tannin, and ripe texture. Despite the vintage character, there’s nice balance here with good freshness and aromatics. 2005 vintage on De 20, 2017 at Sun River, OR with skillet roasted lemon chicken (Ina Garten). Tasted alongside a 1999 Raptor Ridge Shea Vineyard to compare and contrast. Elegant and mature C-d-Pape at the peak of its life. Fully developed with a lot of great life left but also no need to wait to drink. This why we love C-d-Pape.
