Now this is what I’m talking about! Best of this Bouchard haul. I wonder how much vintage played a role. Dense and intense, yet so chiselled. Aromas of pears, peaches, brioche, white flowers, spices, and even a touch of jackfruit were just bursting out of the glass. Super dense, precise, and long on the palate. Egly-Ouriet. Always so lovely. Always so thrilling.
A medium old gold color in the glass with pleasing perlage. Everything here is so very sensual and seductive beginning with the nose. As usual, toasted brioche aromas are prevalent here. Orchard fruits with a generous oak influence. Green apples and dusty libraries with an added kick of quince.
So young but so precocious and inviting. Powerful and full bodied and just so engrossing. The elegance is there, as always. As is the complexity despite the relative youth. Shes a polished and generous lover that can’t help but enchanting you. The freshness of the fruit on the palate is amazing. Slivered almonds, red and green apples, and vanilla brioche. The finish is, of course, long, powerful, and glorious. Let these sit for a few more years because she has so much more to give. And you want it too. — 4 months ago

Very fine mousse but it disappears really quickly.
Strawberries and cream on the nose very vividly. Sweet whipped cream is almost turning into condensed milk. Raspberry, very ripe peach, coissant woth strawberry jam. All sorts of strawberry associations really :)
On the palette mousse slowly fills the mouth, pretty dry on the finish. Brioche, pear, red apple, confiture.

Orange in color, very pretty and unique.
Medium plus in body with medium acidity and medium sized bubbles.
Dry on the palate with a nice mouthfeel.
Showing green apples, light grapefruits, yeast, light raspberries, citrus, limes, light earth, minerals and herbs.
This 16 year old is showing nice complexity at this point, and will continue to age nicely the next 10 years.
Good right out of the bottle, and better with airtime.
Dom Perignon is not my favorite Champagne, but this one is really delicious. I got to call it when I see it.

The NV Brut 7 Crus is a very pretty, entry-level wine in this range. Bright, mineral and intensely vibrant, the 7 Crus is all energy. All the elements are so well proportioned. A blend of 90% Chardonnay and 10% Pinot Noir, this captures all the house signatures with tons of energy and better overall balance than in some previous editions. Haven’t sipped this in quite awhile. 375ml to refresh my palate memory.
40% Pinot Noir, 40% Chardonnay and 20% Meunier. Varietals fermented separately in stainless steel vats. 5 to 10% of wine is vinified in old Burgundy oak barrels.
Texture is round and elegant. The fruits are; both peach, mango, apricots, slightly oxidative white citrus-lime hovers the edges & pineapple juice. Nougat, marzipan, toasted nuts, brioche, saline, crushed chalk, white spice that presses into the palate, notes of cheese cloth, limestone marl, moist, pulpy, grey volcanic minerals, yellow lilies with spring white flowers, jasmine blooms, round, soft acidy and a well; balanced, structured & tensioned finish that lands squarely on mid minerality and lasts 90 seconds.
