Really impressive the second day. Would try again and certainly decant the next bottle. With air loses baby fat and moves from boring cherry to much more interesting spice notes like cocoa and maybe nuts. Good acidity — 10 years ago

Opulent, with this 2007 showing a whiff of incense & rancio, it reminds me of church wine-- except this is my kind of church. Makes me want curried goat or a Korean/Vietnamese feast to see this plush marvel from Languedoc handle a dizzying array of dishes! — 11 years ago

It's going to be hard to cellar the extra bottle for at least another year. This paired perfectly with a garlicky Italian spiced homemade pizza plus a burrata salad but something tells me it would've paired just as nicely with dirt.

When in Rome (as they say) 75% Cab Franc, 25% Merlot. This needs air or you'll think it uninspiring (was best the next day). Violets and slight French oak nose. Smooth, clean blue fruits with tannins up front fading at mid palate. Med/short finish. Solid wine. — 9 years ago
Amazing wine. If you are ever in San Luis Obispo, CA buy some of this wine! We stayed at the Madonna Inn in San Luis Obispo and went to an event that served this Cal Poly wine. Starts out and has a hint of vegetables but finished sweet and fruity. Layers of flavor — 10 years ago
