Haut-Bailly Dinner in SF with Veronique Sanders of Haut-Bailly.

The 2010 is an excellent vintage but, it is for the later part of your life or your children.

This is drinking beautifully with a 4 hour decant. The structure & tension are just starting to their softening stage. The length and balance are in the forget about it range and will just get better & better. Ripe, stunning fruits of; blackberries, dark cherries, black raspberries, plum & a touch of blue fruits. Moist clay & top soils, stones, mint, graphite, fresh tobacco, dark cola, anise to black licorice with stunning, withering floral bouquet. Acidity is perfect. The finish is everything you want in a Bordeaux.

Definitely a 99-100 point wine in 15 years plus.

Served with the Cheese Plate; Red Hawk, Hop Along & Roquefort. @Mathilde French Bistro

Bandita Barbera

Just-right bistro wine. Medium bodied and a tad earthy, light but notable tannin, with a super nice balance. Drink it with a nice steak and some frites. Or a blanquette de veau! Oui oui! — 7 years ago

Coteaux Varois Vin de Provence Rosé Blend

Mineral accentef aromas of raspberry and tangerine carry a suave floral top note. Impressive intensity and depth on the palate offering ripe red berries and a touch of honeysuckle. Clean and good length. — 6 years ago

Côte-Rôtie Syrah 2011

From a Paris bistro list. Dark ruby and opaque in the glass. Attention grabbing nose. Notes of black cherry, iron and graphite, earth and some menthol. Silky and rich in the mouth. Palate staining. Outperformed my expectations. — 6 years ago

Notre Histoire Bourgueil Cabernet Franc 2013

Classic Cab Franc character and phenolics. Bright acid, mineral-driven mouthfeel with expressive strawberry jam flavors. Smoky flint accents and plenty of cow pasture funk. Straight-forward glou-glou bistro wine with freshness and slight effervescence. — 7 years ago

Antle Vineyard Mourvedre Pinot Noir 2014

If this is a bistro style vin de soif, then I wish I could have this more often. The Mourvèdre adds some crunch, however this is still a lighter style made with a deft touch. — 9 years ago

Agreed. I wonder where this will go with a couple years in the bottle. Every time I open one, I swear I'll hold on to the rest. Then I drink another one. And another one. And...

So true! In fact, I think this bottle is better than the last I opened shortly after its release.

Shatter

Vin de Pays de Côtes Catalanes Grenache

So, it's like 60 degrees outside plus massive rain on this mid-December day, with Christmas around the corner. Lisa and I are splitting the French presentation by Chef Chris @ sweet Lauren's Soundside, Steak & Seafood (and more) Restaurant (our amazing local bistro in west Morehead City, NC) where the food is only outdone by the people! For us, it's a large chicken breast with hand-handling drumette😎 and broccolini dipped in an old favorite, (but crazy good when it's good) French onion soup (amazing)! Then there's the wine working its magic making all this good stuff exactly what it was meant to be😎! It's a sensuous nose of coarse chocolate hiding in a lid-bag (words from yesteryear) opened, nakedly exposed and sensually inhaled at the same perfect moment of biting into a late-spring perfectly-fetched strawberry followed by a similarly chocolate-coated Bing cherry, all at once luxuriously coating the front of the lucky drinker's mouth, as it starts a sexy, slow dance home - near magic, but somewhat unfortunately interrupted by a strong hand-to-throat tannic twist that tightens and squeezes either enticingly or curtly (depending on how you like it) as you fantasize another pour, perhaps another year (maybe the 10) where you might languish, linger in a sweaty finish (a good night or a wine fantasy - your choice...)
Cheers! PS inexpensive, but expressive...
