Was going to get the 2016 given I generally love that vintage across much of Europe but the somm talked me into the 2015 saying it was more open. He was right - this was delicious, and still traditional and “old school” with a restrained 13.5%. Tons of pepper and dark dark fruit with some olive. Popped and poured from a half bottle; enjoyed over the course of an hour. The “Oeil de Perdrix” is made in the saignée method and pours a pale copper/pink color with a persistent mousse. On the nose, the wine is developing with notes of strawberry, raspberry, pink pepper, lemon, and chalky minerals. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is medium+. A lovely expression of a Blanc de Noir Rosé from Bouzy. Disgorged April of 2023. — 6 months ago
