Quintessential, astoundingly expressive and aging tremendously well, this may not be emblematic of most 2007 Chablis. I’m definitely on Team Dauvissat.

Great Chablis traditionalist. Eight years down the road and this one hits the spot from the first minute onwards. Precise, pure, creamy, complex and it has Dauvissat written all over it. His Chablis parcel faces (and is next to) the 1e cru parcel 'La Forest', sharing the same small valley with classic Kimmeridgian soil.

Beautiful. Acid, minerality, melon, lemon. Lively and balanced. An elevated village wine.

Ok, so why don't we just drink this all the time? Oyster shells & minerals, oh my! And it's not THAT expensive.
