2023. Earlier this week we picked up a flatiron steak from the University of Nebraska-Lincoln Meat Shoppe that I thought had the marbling of a prime/wagyu grade. I didn’t screw it up on the grill and it was the best steak we’ve had in a while! Ran downstairs to grab something to drink with it and saw my wife’s rack of Total Wine purchases and thought a big Wagnerian Pinot Noir would work with the smoke and mushrooms. It did. Big fruit and smooth tannins.
