A blend of 75% Cabernet Sauvignon, 13% Cabernet Franc, 6% Merlot, 5% Petit Verdot & 1% Malbec, aged for 22 Months in new French oak, 1,960 cases made. Deep Ruby with developing aromas of black berry fruits, sweet spice and notes of blossom and oak. On the palate pronounced flavors of blackberry, black cherry and black plum, almost jammy, some sweet spice and cacao notes. Fine structured soft tannins, well integrated, long finish, ending with fresh fruit character, just starting to add some leather, nutty notes and oak. Outstanding, drinking well, beginning starting to develop some bottle age, but has a decade to go! Tasting Sample.

January Wednesday Wine Committees are always a great as the red wines are required to be 11yrs old, making all of the reds 2008 vintage. 1 sparkler, 2 whites, 4 reds and 1 dessert wine were served today, all blind.

Called this Napa Cab. Sweet and ripe fruit core. Dark in the glass with a tinge of purple. A little surprised this is a mountain wine as the structure wasn’t as I would have thought, but this is drinking in its prime. There was some leather up front, but it was mainly blackberry, plum, fig, and an Andes dark chocolate mint finish. Wonderful.

This one is the later version.
Deep and brooding with supple notes.
Bramble and blackberry with blue fruit and figs.
Even bigger on the mid palate with a loooong silky seductive finish that lingers longer!
These Elivette Cab blends are made to age and they rarely disappoint!

12 years young a beautiful out of the bottle.
Spring Mnt Vineyards recommends holding for a minimum of 10 years.
The way it holds up clearly demonstrates it can go 10 more.

2008 elivette. Smell is full. Definitely greens on the nose. Rich , I get more cocoa. This is probably my favorite. 9.2. At spring.

Smooth, complex, maintaining ample fruit on the nose and pallet.
Chocolate covered cherries entwined with tobacco, leather and a hint of herb.
Lingering soft finish.
Giant blend from the big Mnt .
Excellent structure 10 years out!

Haven’t met a spring mountain bottle I didn’t love. Complex. A wine that makes you sip and then think about everything you’re tasting. Mmmm unfiltered is good
