Biodynamic!
Closed and oxidative at first, med-short finish. After a few hours, apple/pear nose, very dry in style, unique. Still some of the bottle remains for a 24 hour resampling.
This probably needs serious air time to get going, only bottled in 2014 after nearly 17 years resting in oak casks.

Just wow.. This is so different, unique, complex, hard to describe, almost exhausting to taste. 17 years of aging in wood barrels! Every smell and every sip is a little bit different, changes a lot with temperature change and breathing time. Out of the fridge it is very (fino)sherry-like but gains more and more aromas in the glass. Ripe/dried but also fresh (?!) fruit: apple-pear-quince and peach-apricot; elderflower, rose petal, honey, caramel, nuts, vanilla, leather, (very little) petrol, stoney. Acidity must be damn high but so fine and well integrated now, bursting minerality, bone dry and relatively low alcohol with only 12.5abv. Long and juicy afterhall.
