
Not for the faint of heart. I paired this with Wine Braised Beef Short Ribs via Barefoot Contessa. 2 hour decant and it’s off...camphor, black fruit and cassis Lacquer. Without the decant I think the tannins maybe over the top. Lush and dense at first, time made it light and nimble. Rich and opulent with notes of juniper, taste of black truffle and a sweet note of molasses. Finish that is sweet and long with a slight sinus cleanser. Time will aid in the wines development. I’m in!
