Chamomile for days. Minerals, mossy, pear, bruised green apple. Acid slightly more subdued than what I was expecting. Formidable length. A joy.

Amazing with both fish and any Mediterranean food. Or by itself. Sweet and fruity yet crisp with no lingering after notes.
