Vanilla bean pods, cedar cigar box, blueberry preserves, overripe plum, fig, and star anise make up a generous nose. Viscous, black fruits dominate the mouthfeel, with secondary notes of leather and licorice. Chewy tannins linger with blackberry pie and charred oak flavors. Acidity hangs in just enough to stay balanced. Paired with a Creekstone Farms ribeye... but would also go well with chocolate cake or alongside a winter fire.

Sipping Fine Wine

The wines San Roman are rich and mineral which provide power and elegance. Aged for 2 years on French and American oak (50% new), produced with fruit from older vines, vivid deep Ruby with dark berry aromas, floral and spice scents. On the palate cherry and blackberry, fresh, earthy and complex. Fine soft tannins with smoky oak notes, generous acidity and enticing mineral tones on a lingering ending. Time will only benefit.

Perfectly balanced, deep and fresh in flavor, a model for what the Tinta de Toro can be and achieve with balance and precision in the winemaking. Young and right, but lots of juicy acidity and freshness. The tannin is perfect, not too firm, not too dry or too ripe. Blue, black and red fruits with a beam of vanilla and cinnamon spice from the new French oak. Enjoy now with am 30-60 minute decant. #tintadetoro
