Underrated, extra minerally Chablis. Seashells and brine, lemon peel and honeysuckle on the nose but very little fruit on the palate. Yum.

With truffle pasta, it only showed acidity and not much else. Now with some salmon, it has some interesting body. Or maybe it's the two hours of aeration since I opened it. Very good for €11.
