60% Cabernet Franc, 25% Merlot & 15% Cabernet Sauvignon
Nose has spring rose, rain moistened red raspberry, black currant and fresh sage.
Palate has lightly tannic blackberry, wet leather, ripe black currant, cigar box, wet clay and tarry black cherry.
Paired with a long cooked Bolognese sauce over fettuccine. Decanted ~3hr, more time in the decanter would benefit. Future bottles can be 2022+
Happy Father's Day 2019 to all. Today I'm posting pictures of our kids, yes they are all furry, independent and somewhat self-interested. Two boys (8) and two girls (2), sisters, all rescued. They generally bring the utmost of joy to my life on a daily basis. It has been a rainy and relaxing day here, everyone is loving the slow pace of life today.

If you read my posts, it's no secret I really enjoy their Rosé Champagne. Always consistently great and delicious. On the nose; spring florals, sea spray, chalky minerals, tangerine, black cherry, raspberry, watermelon & strawberries. On the palate; tangerine, black cherry, raspberry, watermelon & strawberries, saline, beautiful sticky palate chalkiness, pink roses, baguette, amazing minerality, finish and acidity. Photos of; their house, vineyard and cellar. Producer history and notes...Bilecart was founded in 1818, by husband and wife Nicolas François Billecart and Elisabeth Salmon. For nearly two hundred years, the Billecart family has been making exceptional champagne. Today the House remains independent and is run by the family’s seventh generation under François Roland-Billecart. The Billecart-Salmon House covers around 50 hectares, and gets its grapes from a total of 170 hectares of land. Meaning...they also have a number of great relationships with grape growers. At the foot of the Mareuil-sur-Aÿ hill, the Billecart-Salmon family cultivates one hectare of Pinot Noir on a single, enclosed parcel; the Clos Saint Hilaire. Billecart uses modern and innovative technology to constantly improve the quality of its champagne. From the Côte des Blancs to the Reims Mountain and the right bank of the Marne River are some of the greatest sites for Chardonnay, Pinot Noir and Pinot Meunier. These grapes/sites are all used to make beautiful Billecart champagnes.

And a happy Friday to one and all! This is a splendid traditional amber coloured Irish Red Ale. Aroma of caramel/toffee. A moderate bitterness with a caramel and toffee finish. This wine is good. I was worried it was gonna be sweet but it's not. Notes of stone fruits. Smooth and a clean finish. Not dry at all. It reminds me of a Chardonnay because it has a bit of a buttery finish. — 9 years ago
Happy Father's Day 2020 to all; I'm posting pictures of our fur-kids, an independent and somewhat self-interested bunch. Two boys (9) and two girls (3), all rescued from various locations across the East Coast of the US. They generally bring the utmost of joy to my life on a daily basis.
Nose has blackberry jam on moist leather, minor cedar, very light barnyard notes, grilled blackberry,
blueberry compote, brewed dark roasted coffee, wet garden soil, chocolate vines candy and dried orange peel.
Palate has over-ripe blackberry, wet tanned leather, dark chocolate syrup, dehydrated black cherry, chocolate covered blueberry and moist cedar.
Silky smooth, intense finish running +2m, still showing tannins. Expect this bottle to easily hold another 10+ years without concern, in proper storage.
Decanted ~5h. Paired with well salted (in advance), medium-rare, grilled NY strip steaks from my favorite, local farmer in Columbia Co. NY (Kinderhook Farm) and sauted, early season, baby squash in ozro with our garden herbs.
INAUGURAL vintage on this wine, I certainly didn't realize that fact when we bought it in September 2005! This has been in storage for the prior 15 years, just coming back home in January 2020.

Taylor's is now into its 4th century & one of the oldest Port houses. It is the last totally independent company of the original British Port houses, still family owned and managed. Aged for 10 years in oak casks. Amber color with aromas of sweet dried fruits and nutty notes. On the palate sweet ripe fruit in a nutty oak wrapper, some vanilla and ending with a raisin aftertaste. I really liked this Malbec! Rated 95 points. Best in Show 2016 Decanter awards (wine Olympics). And, I'm not sure where I got it. :(
Behold, La Moneda Reserva Malbec. The name just sounds fancy—and when it comes to flavor, it totally is. At this year's Decanter World Wine Awards (read: the Olympics of wine), this Malbec was named "platinum best in show" and best in the world in its category in a blind taste test, beating out 16,000 other entries. elgian Michel Couvreur was an independent bottler of single-malt Scotch (and this apprentice Jean-Arnaud has carried on after studying under Michel for more than a decade). The cellars are located in Bouze-lès-Beaune in the heart of Burgundy, where Michel aged his single malts for years in sherry butts and then in demijohns or giant bottles kept in total darkness in the exceptionally well-protected underground galleries of Bouze-lès-Beaune. Vatted from 54 whiskies aged 12 to 27 years in oak casks, this malt has a rich amber color, a nose full of dried flowers, tobacco leaf, Jerez wine, and fat almond, plus a powerful, fruity, long finish. What a fantastic accompaniment to smoked salmon when served over ice. It is also perfect as a dinner digestive served at room temperature. — 4 years ago
