The last of 2007 vintage, 80% Macabeo and 20% Xarel-Lo (aged in chestnut barrels) and 50 months in bottle (he disgorges to order). Pear skins and savory/nutty all up in this mofo. Jamon Iberico is the obvious pairing here. — 8 years ago
