Amazing aged Riesling - this bottle turned out better than the last. Stewed and bruised golden apples, still-kicking acid, almond/caramel type nuttiness. Held up well with time! — 5 months ago

'La Carrière' Knights Valley Chardonnay 2021

So first, a caveat: This NEEDS food! It just does. When first opened I really wasn’t a fan, tried to pair it with some lighter charcuterie fare and cheese and it just did not gel. It isn’t the crisp, light bodied chard you’d expect it to be, it’s full bodied, thick, and complex, but once we found the right food, paired with steelhead salmon cooked in butter and bacon grease, wooooah, this moves like you’d found the perfect dancing partner. The color is typical Chardonnay yellow with green hues towards the middle, with strong Meyer lemon and slight dusty stone in on the nose, maybe even some leafy, vegetal notes hidden in there. — 2 months ago

Bougros Chablis Grand Cru Chardonnay 2005

Pulled from the wine fridge and double-decanted about 90 minutes prior to service; enjoyed over the course of three hours. The 2005 Bougros pours a deep straw color with medium viscosity. On the nose, the wine is vinous with notes of marmalade, dried apricot, cashews, chalky minerals, leesy, and slightly sherried. On the palate, the wine is dry with medium+ acid. Confirming the notes from the nose. The finish is long and super chalky.

This improved dramatically as it came up to temperature and had some real time to stretch its legs. It showed all the hallmarks of well aged GC Chablis from a solar year: powerful, dried fruit; the chalk; the acid; its creamy, leesy texture. The sherried, oxidative notes seemed to dissipate over time, freshening up a bit after being cooped up for so long. Bravo! Drink now and before 2030. Thanks Andy!

Senior Faß 6 Ayler Riesling 2023

Orange blossom and the slightest touch of residual sugar to balance out the razor sharp acidity (and balance out my spicy Thai food). This is a light wine but I can almost taste the slate soils and steep slopes.

Whole-cluster grapes and spontaneous fermentations

From Importer:
Appellation: Saar
village: Ayl
vineyard work: All vineyard work is done by hand due to the incline of the vineyards. Absolutely no use of insecticides/pesticides or
fertilizers; the work is completely organic but not certified as such because Florian refuses to spray copper on the vines.

Fourchaume Chablis 1er Cru Chardonnay 2009

Presented double-blind. The wine appears a light straw color; medium viscosity with no signs of sediment. On the nose, the wine is developing with notes of orchard fruit: apples, lemon curd, hot metal and a buttermilk thing. I think there is some oak? On the palate, the wine is dry with high acid. Confirming the notes from the nose and there is a leesy textural element. The finish is long and intensely mineral driven. I called Chardonnay from France, from Burgundy, from the Côte de Beaune, Chassagne- Montrachet, 2018. Well, well…I was close but it was the Chardonnay from the north and with some age!! And awesome showing. Drink now but this has years to go. — 4 months ago

Have had the same “what am I missing” experience with Ceritas. Perhaps just drinking too young…or not?

@Tyler Felous I’m not sure. I’ve had other bottlings - both younger and older - that I quite enjoyed. But for the price the variability is disappointing.

Agreed. Waiting on some of their new Cabernet bottlings. Optimistic 🤞
